It ages up to 90 kg of fish behind a front-opening door, in a mirror-polished stainless-steel interior. The I-FISH Soft Air system ventilates the chamber with a gentle flow suited to fish, taking account of different species and raw material.
From the 7-inch Meatico panel, staff run 3 pre-set fish recipes, programmable recipes of up to 4 stages or 10 fully customisable ones, setting temperature, humidity, fan speed and duration for each stage. Alarm history with pop-up warnings, HACCP logging and Wi-Fi to the Everlasting App are included.
Equipment is 3 pairs of stainless-steel runners, 3 GN 2/1 wire shelves (530 × 650 mm), a fish hook rail with 2 hooks and a UV-C LED germicidal lamp. Two finishes are offered: VIP PANORAMA, mirror-polished AISI 304 inside and out, and BLACK PANORAMA with a black plastic-coated steel exterior.
