For kitchens with higher output, the BBC-08 blast chiller and shock freezer handles 40 kg of chilling or 24 kg of freezing in a single cycle. Its eight levels take GN 1/1 pans or EN 60 × 40 trays at 65 mm spacing. Cycles can end on time or on the food's core temperature, measured with the supplied probe.
Chilling takes food from +65 °C to +3 °C in 90 minutes and freezing reaches −18 °C in 240 minutes, after which the unit holds +2…+5 °C or below −18 °C. The ventilation grille on the front panel is easy to remove. The construction is stainless steel inside and out, with 60 mm insulation.
Defrost is manual and the defrost water is evaporated with hot gas. Temperature range −18…+3 °C, climate class 4, refrigerant R290, rated power 713 W. Net weight is 144 kg and the external dimensions are 790 × 840 × 1290 mm.
