Description

For work beyond blast chilling there is the Everlasting Professional Tray 06 MULTI: its steam humidifier sets humidity between 40 and 95%, and Everlasting lists dough proofing control, low-temperature slow cooking, fish sanitisation and ice cream hardening among its uses.

With the heating option, MULTI versions reach temperatures from −40 °C to +75 °C. For core duty it chills 27 kg of food from +90 °C to +3 °C and freezes 22 kg to −18 °C, by time or core probe and in HARD or SOFT mode. Control is via a 7-inch touch screen that stores custom cycles; a HACCP alarm log and an RS-485 port are standard.

Six pairs of runners for GN 1/1 or EN 60 × 40 trays, pitch 40 mm. Refrigerating capacity 932 W, electrical power 1050 W, refrigerant R290, insulation 60 mm. The deeper body measures 780 × 952 × 937–982 mm; net weight 129 kg; remote version BGE50000000.
