Its internal ventilation is designed specifically for chocolate storage, and temperature and humidity are controlled continuously to avoid lumps and incorrect crystallisation.
Standard equipment is five plastic-coated 397 × 500 mm wire shelves and five pairs of stainless-steel runners, which is also the maximum capacity; extra shelves can be ordered. The interior is set up for 40 × 50 trays and wire shelves. The control panel has a HACCP alarm log and an energy-saving function, and defrost is automatic.
